Warm Thai Beef Salad

1kg sirloin or fillet stead

1 cucumber - chopped

250g cherry tomatoes - halved

SALAD

2 red onions - thinly sliced

1/2 fresh red chilli - thinly sliced

1 bunch spring onions (approx 6 stalks) - sliced

1 Tbsp chopped parsley

1/2 cup chopped fresh corriander

1 tsp finely grated fresh ginger

Dash of olive oil

MARINADE

2 Tbsp fish sauce

2 tsp palm sugar

3 Tbsp red wine vinegar

2 Tbsp avocado oil

1 tsp grated fresh ginger

1. Place all the salad ingredients in a bowl and drizzle with a little olive oil.

2. Mix all the marinade ingredients in a small bowl and pour over the salad - leave to marinate for 30 minutes.

3. Season the steak with salt and pepper.

4. Heat a drizzle of olive oil in a fry pan and cook steak/s until rare to medium rare. Remove from heat and let rest for 5 minutes.

5. Slice steak into thick strips. 

6. Place the cucumber and tomatoes in a dish and top with the marinated salad.

7. Place the sliced beef on top of the salad, serve, and enjoy!
