Pork Belly Bites - In the Air Fryer!

1kg piece boneless pork belly

Sea salt, to sprinkle

SAUCE

​​1 cup fresh orange juice

3cm knob ginger, peeled and thinly sliced

2 whole star anise

1/2 cup caster sugar

2 Tbsp light soy sauce

1. Place the pork belly in a shallow dish. Place in the fridge for at least 8 hours or overnight to dry out (do not cover the pork with plastic wrap as it needs to dry out).

2. Cut the pork into 4cm pieces.

3. Meanwhile, make the sauce- Place all the ingredients in a saucepan over medium heat. Stir until the sugar dissolves. Increase the heat to high and simmer for 10-15 minutes or until sauce reduces and thickens.

4. Spray pork liberally with oil, then sprinkle with salt.

5. Place the pork in the air fryer basket and cook at 200C for 15 minutes or until just golden and crisp. Transfer to a bowl.

6. Repeat with remaining pork.

7. Serve with the orange soy sauce and enjoy!
