Speedy Hawaiian Chicken Burger

2x 150g chicken breast fillets 

4 slices of tinned pineapple - halved horizontally

4 rashers bacon

4 burger buns

2 Tbsp whole egg mayonnaise

4 iceburge lettuce leaves

4 slices real cheddar cheese

2 tomatoes - sliced

Tomato sauce to serve

1. Half chicken breasts horizontally.

2. Top each chicken breast with 2 slices of pineapple.

3. Wrap a rasher of bacon around each chicken / pineapple stack to create a 'chicken, pineapple & bacon parcel'.

4. Heat a large non-stick frying pan over medium heat with a drizzle of oil.

5. Cook each parcel (pineapple side down first) for 3 minutes each side or until cooked through.

6. Spread the bund with mayonnaise and top with the lettuce, cheese, tomato and chicken.

7. Serve & enjoy!
