Creamy Chicken & Bacon Carbonara

500g chicken breast - cubed

5 bacon rashers - sliced

1 onion - diced

1 egg - whisked

4 large mushrooms - sliced

500ml cream

2 Tbsp sour cream

1 tsp garlic (heaped)

1 cup cheese - grated

300g spaghetti pasta

1. Cook pasta as per packet instructions and set aside. 2. Heat a drizzle of oil in a frypan and add chicken, fry until cooked through.

2. Add bacon, onion, mushrooms &garlic, and cook a further 3 minutes.

3. Add cream &sour cream, and simmer for 10 minutes. While stirring, gradually add whisked egg and grated cheese.

4. Continue stirring until all cheese has melted through. Add cooked pasta and toss until combined.

5. Serve & enjoy!
